The jack-o'-lantern did not begin as a pumpkin. In Ireland and Scotland the carved lantern was a turnip or a beet, hollowed and coaled and carried on Hallowe'en to keep something specific away from you. The pumpkin is the American substitution and it was made for the plainest reason available: it was enormous, it was soft, and it was already growing here. The custom is older than the crop. The pick-your-own patch is newer than both.
